The globe artichoke is the bud of a plant from the thistle family, with petal-shaped leaves that comes to a thorny tip. The edible portions are the bases of the leaves and the meaty "heart" which is at the center and bottom of the bud.
Note: Not to be confused with Jerusalem artichoke or Chinese artichoke which are very different from the globe artichoke and are used for their root tubers.
